Welcome back to The Kitschy Kitchen! Today, I’m sharing a favorite in our home—Garbanzo Carob Spice Cake! This isn’t your average cake. It’s rich, satisfying, and designed to meet the needs of those of us with chronic conditions. Plus, it’s gluten-free, grain-free, low oxalate, and a great source of DAO (Diamine Oxidase), thanks to the garbanzo beans.
This cake has become a go-to for Dewey, Zeus, and me, and it all started when I needed to adjust my diet due to mast cell issues. Garbanzo beans (specifically sprouted ones) are one of the few things my body tolerates well, and as a bonus, they’re loaded with protein and good for your gut.
Whether you’re whipping this up for breakfast on the go or a cozy snack, it’s a cake that does it all! 😉
Garbanzo Carob Spice Cake Recipe
Yields: 9x13 pan or two 8x8 pans (or even two 9” round pans).
This cake freezes beautifully, so it’s perfect for meal prep!
Ingredients:
Dry Ingredients:
- 1 cup garbanzo bean flour
- 2 tsp baking soda
- 1/4 tsp pink salt
- 2-4 tsp cinnamon (adjust to taste)
- 2-4 tsp ginger (adjust to taste)
- 3 heaping tbsp carob powder
Wet Ingredients:
- 4-5 tbsp honey (I free-pour)
- 4 tbsp molasses (I free-pour)
- 8 eggs
- 2-4 heaping tbsp Greek yogurt
- 1/2 cup water
Directions:
1. Preheat your oven to 350°F and grease your pan. Line the bottom with parchment paper for extra ease.
2. In a bowl, mix together the dry ingredients.
3. Add the honey, molasses, eggs, and yogurt, and stir until well combined.
4. Slowly mix in the water until smooth.
5. Pour the batter into your prepared pan and bake for 45-50 minutes (baking time may vary depending on pan size and oven).
6. Let the cake cool before cutting. Enjoy!
Variations and Modifications
This cake is a blank canvas! Here are some ideas to suit different dietary needs or personal preferences:
1. For a Chocolate Cake:
- Swap the carob powder for hot chocolate powder.
- Use coffee instead of water for a richer flavor.
- Add chocolate or vanilla extract to your coffee before mixing.
2. For a Fruit Cake:
- For every cup of flour, add 1/2 cup of chopped fruit. Use fresh, dried, or frozen fruit (just make sure to drain and chop accordingly).
- Modify your spices depending on the fruit you use. For example:
- Apples pair well with ginger.
- Apricots are divine with cardamom.
- Raspberries love a bit of vanilla bean.
3. Low Oxalate Adjustments:
If you're following a low oxalate diet, you're in luck! This recipe, as written, is already low oxalate. Garbanzo bean flour is a great choice for those managing oxalates, and carob is naturally low in them. {Some Disagree, so consult your source for information!}
Quick & Healthy Cream Cheese Frosting
No cake is complete without a little frosting! This cream cheese frosting is ridiculously easy and healthy to boot:
- 1 block of softened cream cheese
- Maple syrup (to taste)
- Optional: 1 tsp vanilla extract
Mix the ingredients together, and that’s it! Spread it over your cooled cake for a lightly sweet, tangy finish.
The Importance of DAO (Diamine Oxidase)
If you’re like me, managing histamine levels can be tricky. DAO is an enzyme that helps break down histamine in the body, and garbanzo beans are a great source of this. Incorporating them into your diet may help with histamine-related symptoms. This cake provides not only a tasty treat but also a little boost to support your body's needs!
